One gallon milk
1/4 cup plain yogurt
2 cups heavy cream

Directions:

Mix the cream into the milk and scald to 180º stirring constantly.

Plunge mixture into an ice bath and cool to 110º.

Add 1/2 cup of mixture to the yogurt and mix. Then whisk into the mixture. Cover and wrap with a towel and let sit for 4-6 hours keeping at 110º.

Then strain off whey. I put an old t-shirt into a colander, pour in mixture and let drip into a pot. You can leave on counter overnight or put in refrigerator. After sitting overnight, remove 1/2 cup to use as starter for the next batch. Continue to strain whey until it reaches the desired consistency.
