Ingredients: Mustard Horseradish Sauce: 1/3 C. mayonnaise 1 Tbsp. whole-grain mustard 2 tsp. prepared horseradish 2 tsp. lemon juice Pinch of cayenne pepper Combine all ingredients in a small bowl. Makes 1/2 cup.
Lemon Aioli: 1/2 C. mayonnaise 3 cloves garlic, minced or pressed 2 tsp. grated fresh lemon peel 1/8 tsp. pepper Combine all ingredients in a small bowl. Makes 1/2 cup.
Chinese Sweet and Sour Sauce: 1/3 C. pineapple juice 2 Tbsp. packed brown sugar 2 Tbsp. white vinegar 1 Tbsp. soy sauce 2 tsp. minced fresh ginger 1 tsp. catsup 1 tsp. cornstarch Combine all ingredients in a small saucepan; stir over medium heat until mixture boils. Serve warmed or chilled. Makes 1/2 cup.
Vietnamese Dipping Sauce: 3 Tbsp. seasoned rice vinegar 2 Tbsp. fish sauce 4 tsp. water 1 1/2 tsp. minced or grated fresh ginger 1/4 to 1/2 tsp. dry hot red pepper flakes Combine all ingredients in a small bowl. Makes 1/3 cup.
Remoulade Sauce: 1/2 C. mayonnaise 1 Tbsp. capers, drained and minced 1 anchovy fillet, minced, or 3/4 tsp. anchovy paste 2 tsp. Dijon-style mustard 1 tsp. dry tarragon leaves Pinch of black pepper Stir all ingredients together in a small bowl. Makes 1/2 cup.
