2 c. graham cracker crumbs or 2 pre-made graham crusts
4 T. sugar
1/2 c. butter, melted
2 (8 oz.) pkgs. cream cheese
2 c. powdered sugar
1 c. whipping cream (whip it till stiff)
1 tsp. lemon juice for filling
2 c. huckleberries
1 c. sugar
1/4-1/2 c. flour
1 tsp. lemon juice for topping

Crust - add graham cracker crumbs, sugar and butter together and press into two pie plates. Bake at 375º for about 8 minutes. Cool.

Pie Filling - Cream powdered sugar and cream cheese until smooth (do not warm the cream cheese) then add whipping cream and lemon juice. Divide and spread into the two cooled pie crusts.

Topping - Mix together in a saucepan the huckleberries, sugar, flour and lemon juice. Cook over medium heat until it thickens. Watch it to make sure it doesn't burn on the bottom. Cool and spread over cream cheese pie filling. Refrigerate.

My good friend Dianne Mitchell made this when she picked fresh huckleberries. I was surprised she shared her recipe. Also a good pie recipe for different fruit toppings.
