1 1/2 lbs fully cooked ham, cut into 3/4 inch cubes
6 stalks celery
33 oz. mandarin orange sections(with pineapple optional)
3 tsp cornstarch
1/2 tsp ground ginger

Directions:
Directions:
In a Dutch oven, mix ham, celery, and 3 tbsp water. Cover and cook for 15 minutes. Drain orange sections, reserving 1 cup liquid. in a small bowl, mix together corn starch, ground ginger and reserved liquid.

Drain liquid off ham and celery and add oranges and mixture. Cook uncovered for 10 minutes or until mixture thickens. Serve with hot rice if desired.
