10-12 large sweet potatoes/yams (cleaned)
1 cup butter or margarine (softened)
2 cups shredded cheese
1 cup brown sugar
1 package of bacon (cooked and cut into pieces)

Directions:
Directions:
Preheat oven to 350° F.
Rub olive oil on washed potatoes. Place on aluminum foil lined baking sheet. Cook for 1 hour.

Cut baked potatoes in half. Spoon potato mixture out of shells. Make sure to not discard the shells as they are used for baking.

Mix potato, bacon, cheese, brown sugar and butter together.

Place mixture in potato skins.

Top potatoes with shredded cheese. Bake for 20-30 minutes.
