2/3 cup cool water
4 extra large eggs
1 1/3 stick butter (melted)
4 2/3 cup white flour
½ cup plus 2 TBSP sugar
1 TBSP plus 1 tsp yeast
1 1/3 tsp salt
1 tsp vital wheat gluten


Fillings/Topping:
Apricot filling:
10 oz package of dried apricots
1 ½ cups sugar

Cherry filling:
1 can cherry pie filling
½ cup sugar
2 TBSP cornstarch
1 tsp almond extract

Crumble mix:
2 TBSP flour
2 TBSP sugar
¾ TBSP butter
Mix with fork until smooth.

Directions:
Place all items in bread machine/bowl as listed. (Use dough setting when utilizing bread machine. Use dough hooks if using mixer.) Once dough is completely mixed and sticky to the touch, take out of bowl and place on a floured board or rolling surface.

Cut and shape into balls. Place on a greased cookie sheet or pan, about 2 inches apart. Butter well. Let rise. When the dough has doubled in size, use your fingers to spread each kolache apart in middle leaving ½ inch edge. Place scantly filled tablespoon of filling into each kolache. Allow to rise again.

Bake 12-15 minutes at 350-375° F. Brush butter on edges with pastry brush immediately after removing from oven.

Filling/Topping:

Apricot Filling: Cook a 10 oz package of dried apricots slowly in enough water to cover them. Cook until very soft and then drain. Add 1 ½ cups sugar and mash with a potato masher.

Cherry Filling: Bring all ingredients to a boil. Mix with a beater to chop up cherries.

Crumble Topping: Mix with fork until smooth.
