• 2 (15 ounce) cans garbanzo beans, drained and rinsed
• 2 (15 ounce) cans black beans, drained and rinsed
• 1 (15 ounce) can black olives, finely diced
• 1/2 cup (packed) chopped fresh cilantro
• 1/2 cup (packed) chopped fresh parsley
• 1/2 cup chopped red onion
• 1 1/2 pint grape (or cherry) tomatoes, finely diced
• 1 to 2 cloves garlic, minced
• 1/4 cup olive oil
• 3 tablespoons lemon juice
• Sea salt and ground black pepper to taste
• 1 tsp. ground sumac

• In a large salad bowl, combine garbanzo beans, black beans, black olives, tomatoes, onions, parsley and cilantro. Lightly mix.
• In a separate bowl, combine minced garlic, olive oil, lemon juice, salt, black pepper and sumac, whisk until well blended.
• Pour the dressing over the salad and toss.

Feel free to add any other spices you'd like (red pepper, cayenne, etc.)
If grape or cherry tomatoes are not in season, plain tomatoes work just fine. We have also used fresh pico degio, and added a little chili powder.
