Twelve corn tortillas
1 chopped onion
12 ounces grated cheese (cheddar, Monterrey jack, or mixture)
Pam
1 can of chili without beans (or homemade chili)
1 can of red enchilada sauce

Directions:
Directions:
Spray tortillas with Pam on both sides and microwave (wrapped in a paper towel) three at a time for 20 seconds. Place 1 tbsp. of chopped onion and 2 tbsp. of cheese on edge of each tortilla and roll up and place seam down in a greased 9x12 dish.

Mix and heat together the chili and enchilada sauce and pour over enchiladas.

Bake at 350º for 25 minutes and sprinkle with remaining cheese during last 5 minutes of cooking.
