2 lbs. russet potatoes, peeled
5 Tbsp. butter
1 2/3 C. Parmesan cheese
1 clove garlic, crushed
3 Tbsp. chopped parsley
1 egg plus an egg white
Flour
Bread crumbs

Directions:
Directions:
Quarter and cook potatoes. Mash and cool slightly. Add butter, cheese, garlic, the whole egg and parsley. Shape into patties. Roll in flour and reserved egg white, then in bread crumbs. Fry until golden in 1 cup oil. Drain on paper toweling.

These are so good with any type of broiled pork chops. Occasionally, I will add a chopped scallion to the mix for a bit of extra flavor. This recipe works well using left over potatoes, just eyeball the ingredients.
