Seven to eight pound beef brisket
4 tbsp. liquid smoke
Onion salt
Garlic salt

Sauce:
1 1/2 tbsp. brown sugar
1/2 of a 14 ounce bottle of ketchup
1/4 cup water
1 tbsp. liquid smoke
Dash of salt and pepper
2 tbsp. Worcestershire sauce
1 1/2 tsp. dry mustard
1 tsp. celery seed
3 tbsp. butter

Rub liquid smoke on outside of the brisket. Wrap the brisket in foil and refrigerate overnight.
Next morning, rub onion salt and garlic salt on outside of the meat and rewrap in foil. Bake in a 300º oven for 5 1/2 hours. Let cool; pour off fat and slice. Pour sauce over sliced meat. Rewrap in foil and bake at 350º for 1 hour. Serve with additional sauce.

Sauce: Mix together and bring to a boil. I often double the sauce recipe. You can use hot ketchup for a sauce with an extra kick.
