1 cup 100% Whole Wheat Flour
3/4 cup Unbleached White Flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 cup soft shortening or butter
3/4 cup packed brown sugar
1 egg
1/4 cup molasses

Directions:
Directions:
Combine and mix first 5 ingredients in bowl. In a separate bowl beat shortening or butter until creamy. Add brown sugar gradually; beat well after every addition. Add egg and molasses; beat until smooth. Blend in dry ingredients. Mix well. Chill dough 1 to 2 hours. Shape dough into balls using a level Tbsp of dough for each. Place balls 2 inches apart on ungreased baking sheets. Bakin at 325º about 15 to 18 minutes. Let cool on a wire rack. Makes about 3 1/2 dozen cookies.
