2 c. heavy shipping cream
1 T. chipotle chile puree (directions below)
4 med. sweet potatoes, peeled and slice 1/8" thick
salt and pepper
chipotles in adobe sauce (for puree)
green onion, thinly sliced, white and green parts

Preheat oven to 375º
whisk together the cream and chipotle puree.
in a greased 10 x 10 baking dish place a layer of potatoes, drizzle with a little cream sauce, salt and pepper, repeat layers making 5-6 layers. Press down on the potatoes so all are coated with cream.

cover with foil and bake for 30 minutes, uncover and bake for 30-40 minutes until potatoes are soft.

Let cool sightly, then garnish with green onion and slice. can be made oe day prior.

chipotle puree: put chiles and bowl and cover with boiling water, let soak for about 25-30 min., or until soft. remove stems and seeds, keeping the water.
put chiles in food processor with a little of the water until smooth. add a can of chipotles in adobe sauce and puree. this will last in refrigerator for up to a month because of the vinegar in adobe sauce.
