1 box white cake mix
1 1/4 cups water
1/3 cup oil
2 tsp mint extract
3 egg whites
12 drops green food coloring
2 jars hot fudge topping
1 container cool whip
5 drops yellow food coloring
Andes mints

Directions:
Directions:
Heat oven to 350 degrees. Spray bottom only of 9 X 13 inch pan.

Make cake as directed on box, using water, oil and 1 1/2 tsps of mint extract and egg whites. Reserve 1 cup of batter. Stir 3 drops of the green food coloring into reserved batter, set aside. Pour remaining batter into pan.

Drop green batter by generous Tbsp randomly in 12 - 14 mounds onto batter in pan. Cut thru batter with knife in s-shaped curves in one continous motion. Turn pan1/4 turn , repeat cutting for swirled design.

Bake 28 - 33 minutes or until toothpick comes out clean. Run knife around pan to loosen cake. Cool completely about 1 hour.

Carefully spread fudge topping over cake. On medium bowl mix cool whip and remaining 1/2 tsp extract. remaining 9 drops of green coloring and the yellow food coloring until well blended. Spread cool lwhip over cake and garnish with Andes Mints. Store covered in refrigerator.
