4 avocados
1 large red pepper
5 green onions (green and white parts)
1/4 cup mint (finely chopped)
1 tbsp minced ginger
1 tbsp chopped lemongrass stalk
3 tbsp lime juice
1 tbsp soy sauce
1 tbsp Asian fish sauce
1/2 tsp Chinese chili paste (I use siracha)

Mix it all up. Refrigerate for an hour. Serve with crispy tortilla chips. I like to use blue corn chips.
