2 c. flour
1 c. butter
½ c. icing sugar
¼ tsp. salt
1/8 tsp. nutmeg
1 egg yolk

Directions:
Soften butter. Stir in sugar, salt, nutmeg and egg yolk with wooden spoon. (I use mix-master, but don’t overbeat butter, that’s one of the secrets to shortbread. Add flour, a little at a time until mixture too stiff to work with wooden spoon. Knead until dough just cracks. Roll out in desired shapes (or – I divide dough into 2 and shape into rolls and then roll in waxed paper and put in fridge; later slice into cookies. Can also be rolled over coloured sugars before putting in waxed paper ). Place on ungreased cookie sheet. Bake at 325ºF for 10+ minutes or until lightly browned.

Add red and green cherries, walnuts or even chocolate chips if you like to the mixture (if you are making into rolls to slice) to give colour and taste. Very good recipe but I do find it takes more like 20 minutes in the oven, just watch carefully. Dough keeps well in fridge for weeks.
