Lemon Pecan Sugar Cookies Recipe

Ingredients: 1/2 lb of butter (1 stick); 1 1/2C sugar; 2 eggs; 1t lemon extract; 2T milk; 2 1/2C flour; 1/2t salt; 1/2t baking powder;

Directions:1) Preheat oven to 350º F. 2) Cream together sugar and butter by hand or use a the batter blade on an electric mixer. Mixer speed should be slow. 3) Add eggs, vanilla, milk, salt and baking powder. 4) Add about half the flour to the mixer. When this is well mixed, add the rest of the flour. 5) Add chopped pecans and dried cranberried (if desired). Mix slowly until equally distributed within the dough. 6) With a teaspoon or small scoop, drop mounds of dough at least 1" a part on ungreased cookie sheet. 7) Bake for 10 minutes until golden. Remove from baking sheet immediately and allow to cool on a rack. |

Notes: One of my strong childhood memories was to go with my mother to Swenson Bakery shop on Main Street in Vermilion, Ohio. It was full of wonderful smells and interesting people. The owner/baker was always dressed in a white work uniform and covered in flour. I would see him walk from the back to the big roll top desk behind the counter. He never waited on customers. That was his wife's job. One of my favorite treats was their sugar cookie which had a lemon flavor. I have recreated this cookie here but the addition of pecans and dried cranberries is my own spin on the recipe. Enjoy!
