1 loaf Italian bread, halved horizontally
14 oz. can artichoke hearts, drained and chopped
1/2 c. light mayo
4 oz. jar pimento, drained and chopped
1/4 c. shredded Parmesan cheese
1/4 c. chopped green onion
1 T. Dijon mustard
2 cloves garlic, minced
1/3 c. shredded mozzarella cheese
3 T. dried seasoned bread crumbs
1 tsp. olive oil

Directions:
Directions:
Preheat oven to 400 degrees. Line jelly roll pan with foil. Place bread halves, cut side up, on pan.
In bowl, combine first 5 ingredients. Spread mixture over bread, sprinkle with mozzarella cheese.

In small bowl, combine bread crumbs and oil. Sprinkle over mozzarella.

Bake 15 - 20 minutes or until lightly browned and heated through. Cool slightly. Cut each bread half into 6 pieces.

This is a great appetizer or served along with a pasta dish.
