1-14 oz. can crushed pineapple, well drained
2 c. carrots, grated
1/2 c. coconut
2 tsp vanilla
1 c. raisins
2-1/2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
3 eggs, beaten well
2 c. white sugar
1-1/2 c. vegetable oil

Frosting
8 oz. cream cheese, softened
1/4 c. butter
2 tsp. vanilla
2-1/2 -3 c. icing sugar, sifted

Grease and flour a 9" x 13" pan. Preheat oven to 350ºF.
In a large bowl, mix pineapple, carrots, coconut, vanilla and raisins and set aside. In another large bowl combine flour, baking soda, salt and spices and set aside. Beat eggs, gradually adding sugar and vegetable oil. Add flour mix and then stir in fruit mix. Pour into prepared pan. Bake for 1 hour.

Frosting: Cream together cream cheese, butter, vanilla and icing sugar. Frost cake when cooled.
