1 tbsp. olive oil
1 med. onion, sliced into thin rings
2 cup cauliflower florets
2 med. carrots, sliced diagonally
1 tbsp. minced fresh parsley
1/4 cup pumpkin seeds

Directions:
Directions:
Sauté onion in large skillet. Add cauliflower and carrots and stir. Add a few spoonfuls of water to steam vegetables. Cover , until vegetables tender about 15 minutes. Toss vegetables with parsley and pumpkin seeds. Serve hot or cold.
