1 tbsp. oil
3-3 1/2 lbs. boneless beef pot roast (rump, chuck or
round)
4 carrots
4 med. potatoes (about 2 lbs.) cut into 1-inch
pieces
2 pkg. onion soup mix
3/4 c. water

Directions:
Directions:
1. In a large nonstick skillet, heat oil over med-high
heat and brown roast.

2. In slow cooker, arrange carrots and potatoes, top
with roast; set aside.

3. Mix onion soup mix and water. Add to skillet,
scraping up any brown bits from the bottom of
the pan. Add soup mixture to the slow cooker.
Cook covered on low for 8 to 10 hrs. or on high
for 4 to 6 hrs. Remove roast and vegetables to
serving platter.

4. Thicken gravy, if desired, by combing 1/4 c.
water with 2 tbsp. flour. Cook high for 15 min. or
until thickened.
