12 oz pkg frozen chopped spinach
4 large eggs, lightly beaten
1 lb soft cheese (ricotta, dry cottage)
1 tsp. salt
Pepper to taste
2 tsp. butter
1/4 cup onion, chopped
1 garlic clove, chopped
12 oz mozzarella cheese, grated
4 tbsp. butter
4 tbsp. flour
2 cups milk
3/4 cup parmesan cheese
Salt to taste
9 lasagna noodles

Directions:
Directions:
Cook lasagna noodles as directed on package.
Thaw spinach, drain thoroughly. Combine with beaten eggs, soft cheese, salt and pepper.
Melt butter and sauté onion and garlic until golden. Add to spinach mixture.
Arrange 3 lasagna strips lengthwise over bottom of greased 4 L (13” x 9” x 2”) pan. Cover with half of spinach mixture and half of mozzarella cheese. Repeat layers. Top with remaining 3 strips of lasagna.
Prepare sauce by blending butter and flour in heavy sauce pan over low heat. Stir in milk gradually. Add 125 ml (1/2 cup) of the parmesan cheese and heat, stirring constantly until smoothly thickened. Season with salt to taste. Pour over lasagna, sprinkle with remaining parmesan cheese.
Bake at 350ºF oven for 35 minutes. Serve immediately.
