1/4 lb. butter
4-5 cut up carrots
3 medium onions, cut-up
1 box chicken stock, low sodium
250 ml sour cream
5 tbsp. curry powder
Salt & pepper to taste
Parmesan cheese for garnish
parsley for garnish

Directions:
Directions:
Cook butter, onion & carrots until they get a milky film ( about 20 minutes)
Add stock & curry powder. Cook for about ½ hour.
Puree mixture with hand mixer.
Add sour cream, then warm as necessary

Note; if soup is too thick add a bit of water.

Sprinkle with parmesan cheese and parsley for garnish.

Serves 8
