8 Medium Beet (4 Golden and 4 Red)
½ lb. Humbolt Fog Goat Cheese
1 C. Arugula
Olive oil

Dressing:
4 T. Lemon juice
2 T. Honey
3 T. Olive oil
2 t. Dijon mustard
Salt and pepper to taste

Directions:
Directions:
Preheat oven to 350. Slightly cut off each end of the beets. Place on a large cookie sheet and drizzle with a bit of olive oil to coat each beet. Bake for about an hour or until the beet is tender. Use a sharp knife to test. Let cool and peel each one. Cut into slices.

To make the dressing, add all of the ingredients into a small plastic container with a lid. Shake well. Taste and adjust seasoning to your preference.

Place the beets onto a platter or individual plates. Add a slice of the goat cheese to each plate or several to the platter. Drizzle the dressing over the beets and garnish with the arugula. Season with salt and pepper.
