25 lbs. red potatoes boiled & salted. They should not be mushy.
1 doz. eggs boiled, cold & peeled
1 large onion diced
25 stalk of celery more or less, diced
5 pints Hellman's Mayonnaise
Yellow mustard - no measurement but mom's instructions were to add the mustard to the mayo until it was a light yellow color.
Salt & pepper - no measurement given. Taste to see if it needs more.

Cool potatoes to room temperature & then refrigerate to cold. Skin & chop. Add chopped eggs and remaining ingred. & mix. Adjust seasoning, sprinkle with paprika & refrigerate.
