1 c diced Roma tomatoes
1/4 c shredded Parmesan cheese, divided
3 T snipped fresh basil
1 T olive oil
1/2 tsp finely minced garlic
1/2 tsp salt
1/8 tsp ground black pepper
12 slices baguette, sliced on the diagonal 1/2" thick

In a small bowl, combine tomatoes, 2 T. Parmesan cheese, basil, olive oil, garlic, salt and pepper. Arrange bread on a baking sheet; spray tops lightly with olive oil cooking spray. In preheated broiler, broil 4 inches from heat, until edges are lightly browned (about 45-60 seconds). Divide tomato mixture over toasted bread; continue to broil 45 seconds. Sprinkle with remaining 2 T. shredded Parmesan.

Make up mixture ahead of time and marinade for awhile to really bring out the flavors. Warming the topping brings out the full flavor of this classic appetizer. Very Yummy.
