1lb great northern beans;
1lb of cubed pork;
1 medium onion, chopped;
1lb sliced mushrooms;
1t dry mustard;
3T brown sugar;
1t pepper flakes

Directions:
Directions:
1) On the night before use, soak the beans in water overnight.
2) On day of preparation, simmer beans in the soaking water for 30 minutes. Drain off liquid. Transfer beans to a baking crock with cover.
3) Add pork, onion, mushrooms, mustard, sugar, pepper flakes.Add salt and pepper to taste. Toss all ingredients together with the beans.
4) Add water to level of beans. Cover crock and place in oven. Bake at 350º for 2 hours or 220º for 6 hours.

Aunt Grace was famous for her baked beans dish and would bring it as her contribution to a family pot luck dinner. Once she was bringing beans in for dinner at Slim Acres where there was a long slate side walk leading to the house. The pot was quite heavy and Aunt Grace dropped the pot on the sidewalk half way in. We heard a yelp and we all went out to seen Grace and the ground and the crock broken. Well we immediately rescued Grace and her beans form the sidewalk. We carefully separated the broken pot shards from the beans and the meal went on with out a hick up. However, Uncle Ted found a pot shard in his beans and we had to fess up to the incident. We all had a good laugh and the beans were even more delicious.
