6 c. pinto beans
1 slice bacon
1 clove garlic
2 tsp. salt

Directions:

Soak beans for 4 hours. Add more water to pot. Add bacon & garlic. Boil for 3 hours. Add salt. Test the beans, cool a spoonful and see if you can squish with finger. Must be soft.
Let cool, removed bacon & drain oil off top.
Refry: pour beans in a pan (make sure you have enough of the juice), add Monterey jack cheese about 4 chunks. Heat until cheese is melted in and smash beans with a tool. Don't smash too much, leave some beans semi-whole.
