4-1/2 qts. or 3 cans regular-strength chicken broth.
1 pkg. (9 oz.) fresh cheese-filled spinach tortellini
1 lb. spinach
1 lb. chicken breast cut into 1/2" chunks
1/2 lb. mushrooms, sliced
1 medium-size red bell pepper, seeded & diced
1 c. cooked rice
2 tsp. marjoram
Grated Parmesan cheese

In an 8 to 10-qt. pan, bring broth to a boil, covered, over high heat. Add tortellini, reduce heat, & boil gently, uncovered, just until tender to bite (about 6 min.).
Add spinach, chicken, mushrooms, bell pepper, rice, and marjoram to broth; return to a boil over high heat. Reduce heat, cover & simmer until chicken is no longer pink in center; cut to test (about 2 min.). Ladle soup into large bowls. Sprinkle cheese over individual portions.
