5 slices bacon, cooked crisp
1 1/2 T. shallot fine chop
1/2 c. red wine vinegar
2 T. honey mustard
or use Dijon and Honey
Salt and pepper

8 c. spinach fresh baby
8 oz button mushrooms thinly sliced
1/2 red onion sliced thinly

Directions:
Directions:
Set aside bacon and chop when cool.
Heat fat to med high, add shallots and cook for 2 min. Whisk in vinegar, mustart, salt and pepper. Bring to simmer, then remove from heat.
Toss together spinach, mushrooms, bacon, and onion. Pour hot dressing over salad and toss. Serve warm.
