2 lb. sweet potatoes, cut into long slivers (like French fries)
1/2 c. zesty Italian dressing
1/2 tsp. pepper
1 large red onion, sliced
1/3 c. chopped parsley
1/4 c. bacon bits
1 c. shredded cheddar cheese

Directions:
Directions:
Toss sweet potato slivers with dressing and pepper. Bake in a single layer on a 15" x 10" cookie sheet at 450ºF for 20 minutes. Stir in red onion and continue to bake for 20 more minutes or until vegetables are tender. Sprinkle with parsley, bacon bits and shredded cheese and bake an additional 2 minutes or until cheese is melted. Serve with sour cream dip.
