2 large sweet onions, sliced
1 tbsp. olive oil
2 lbs. fresh baby carrots, halved lengthwise
1 tsp. salt
1/4 tsp. pepper
1/4 c. maple syrup
2 tbsp. butter
1/2 c. French fried onions
8 bacon strips, cooked and crumbled
1/4 c. green onions, chopped

Directions:
Directions:
In a large skillet, cook onions in oil for 15-20 minutes until golden brown, stirring frequently. combine onions, carrots, salt and pepper in greased 3-quart baking dish. cover and bake at 400ºF for 40-45 minutes or until tender. Stir in syrup and butter. Sprinkle with French fried onions and bacon. Bake uncovered 5 minutes longer. Sprinkle with green onions.
