4 boneless skinless chicken breasts
1/2 lb monterrey jack cheese
1-2 fresh jalapeņos
1 lb bacon

Directions:
Directions:
Cut cheese into 1" cubes. Seed the jalapeņos, and slice (you need 8 slices). Butterfly the chicken breasts, then cut in half so that you have 8 halves. Pound the breasts to approx 1/4" thin. Place 1 cube of cheese and 1 slice of jalapeņo on each breast piece. Fold chicken around cheese and jalapeņo, wrap with 1 slice of bacon, and secure with toothpick. Grill or broil until bacon is crispy and chicken is completely done - approx 10-12 minutes.
