2 lbs. sliced bacon
2 medium onions, finely chopped
2 dozen eggs, lightly beaten
12 c. frozen hashbrowns, defrosted or about 3 lbs freshly grated potatoes
2 lbs. cheddar cheese, grated
1 lb. Swiss cheese, grated
16 oz small curd cottage cheese
black pepper to taste

Directions:

Cook bacon, drain and crumble it. Saute onion until limp in a little of the bacon grease. In a large mixing bowl, crumble the defrosted hashbrowns; add remaining ingredients. Mix well and pour into a full sheet pan or 2 half sheet pans. Bake at 350ºF for 40 minutes. Let stand for a few minutes before serving.

Serves 40. I also add one small pre-cooked ham, cut into small pieces. I put it all together in one large pan and needed to bake it longer than the 40 minutes. I think it was about an hour.
