3 tbsp. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. milk
2 c. flour
3 tsp. baking powder
1/2 tsp. salt

Directions:
Directions:
Cream together shortening and sugar. Add eggs, vanilla and milk. In separate bowl mix flou, baking powder and salt; then gradually add to liquid. Bake at 375ºF in greased baking pan for 30-35 minutes.

This recipe is from a trapper who lived in a cabin on Dublin Creek near Thunder Bay on the north shore of Lake Superior. He gave it to a pastor (my dad) on one of his visits in the 1960's. This recipe has never failed for me. It is easy to dress up with blueberries, rhubarb, a cinnamon/brown sugar topping - the possibilities are endless. It is a very plain cake recipe with only 8 ingredients, but wonderful!!
