2 cans apricot halves or peach slices, reserve syrup
2 1/3 c. bran flake cereal or graham crumbs
2 tbsp brown sugar
1/4 c. melted butter or margarine
1 envelope unflavoured gelatin
1/3 c. sugar
2-250g pkg. cream cheese, softened
1/2 tsp. almond extract

Preheat oven to 375ºF. Reserve about 4 apricot halves or peach slices for garnish. Chop the rest. Combine crushed cereal, brown sugar and butter; reserve 2 tbsp. Press remaining onto bottom of 8" or 9" square pan or a 9" springform pan. Bake 5 minutes; cool. Mix syrup with water to make 1 cup and bring to a boil. Meanwhile, in large bowl, mix gelatine and sugar; add hot liquid and stir until gelatine is dissolved. With electric mixer, beat in cream cheese and almond extract until smooth, about 5 minutes. Fold in chopped fruit and pour into prepared crust. Sprinkle with reserved cereal mixture. Chill until firm. Garnish with reserved apricot halves or peach slices.

Makes about 12 servings.
