1 cup plain flour, sifted
1/2 cup fine granulated sugar
3 oz whole almonds with the brown skin
3 egg whites

Directions:
Preheat oven to 350º. Butter an ovenproof loaf pan.
1. Beat egg whites with electric mixer.
2. Add sugar and continue beating until the mixture is stiff.
3. Fold in the sifted plain flour carefully. (Try not to deflate the egg whites.)
4. When the flour is completely blended, add the whole brown skinned almonds, distributing evenly.
5. Pour the prepared mixture into a buttered loaf pan and bake for approx. 30 minutes at 350º, until the top is light brown and feels firm to the touch.
DO NOT open the door of the oven before 30 minutes or the mixture will deflate.
6. When the loaf is ready, remove from the oven and reduce the temperature to 200º. Loosen the sides of the loaf from the baking pan, remove it and leave on a wire cooling rack until cold.
7. With a very sharp knife, cut very thin slices and place them on an un-greased cookie sheet. Return to the oven to dry.
