1 cup of raisins
1 cup of cooked rice
3 cups of whole milk
1 tbsp butter
3 medium eggs
1/2 cup of sugar
1 tsp of vanilla
1/4 tsp of nutmeg

Directions:
Directions:
Place raisins and cooked rice in a lightly buttered deep 2 qt casserole dish. Heat milk and butter to scalding (not boiling), lightly beat together eggs, sugar, vanilla and gradually stir in to heated milk. Pour over raisins and rice, sprinkle with nutmeg. Set dish in a shallow pan with 1 to 1-1/2 inches of water and place in oven on middle rack uncovered in preheated oven at 350º for 1 hour. Let stand and cool.

"The taste is in the pudding"! It was served as "rice custard" in a little bistro in Chester/Nova Scotia with a little blob of whipped cream.
