1 c. mayo
3 tsp. curry powder, or to taste.
1 lb. cooked chicken - cut in chunks
3 celery stalks - sliced
8 strips bacon - fried crisp & chopped
1/2 c. raisins
1/2 c. shredded coconut
1/2 c. green apple-unpeeled & cut in chunks
1/3 c. chopped peanuts
1/2 c. chopped fresh parsley
1 large banana, sliced just before serving & tossed with fresh lemon juice.

Combine Mayo and curry - set aside to blend flavors. Lightly toss other ingredients together. Serve on bed of lettuce and garnish with parsley springs.
