1 lb. box Acini de Pepe (macaroni)
3 small cans mandarin oranges, drained
2 large cans chunk pineapple drained
1 large can crushed pineapple, drained
1 small can whole sliced pineapple, drained
1-3/4 c. pineapple juice (drained from above)
1 c. sugar
2 Tbls. cornstarch
2 eggs beaten
1 tsp. lemon juice
1/2 tsp. salt
2 c. miniature marshmallows
1 c. coconut
1 container cool whip
2 eggs beaten

Directions:

Cook macaroni in boiling salted water until tender. Rinse & drain. In saucepan combine sugar, cornstarch (or flour), salt & pineapple juice & eggs. Cook until thick & smooth, add lemon juice & cool. Combine with macaroni, fruits, coconut & cool whip. Stir until blended. Chill 24 hours.

Another great "make-ahead" for family and party gatherings. Erroneously called "frog eye" salad. "Frog eyes" refer to Tapioca. This is made with macaroni, there's not a tapioca in sight.
