Ingredients: 1 lb. 95% lean ground beef 10 oz. can diced tomatoes with green chilies 14 ½ oz. can diced tomatoes 2 tsp. Splenda no calorie sweetener 2 tsp. salt 6 oz. can tomato paste 8 oz. uncooked egg noodles 2 oz. low-fat shredded cheddar cheese ½ cup grated Parmesan cheese 2 oz. low-moisture, part-skim shredded Mozzarella cheese 1 cup fat-free sour cream

Directions:Preheat oven to 350. Cook and drain beef. Add tomatoes, Splenda, and salt & pepper to taste. Cook 5 more minutes. Add tomato paste, stir in and cook on simmer for 30 minutes. Cook noodles separately and drain. Stir in sour cream to noodles and then place pasta mixture in a 13" x 9" greased baking dish. Top with meat mixture and evenly spread cheeses over the top. Bake covered with foil for 35 minutes, then uncover and continue cooking for 5 more minutes until cheeses have melted. Let cool a bit and cut into 8 pieces. |

Notes: I am not into Weight Watchers but this is a real hearty, good tasting dish. Serve with some garlic bread and a glass of wine for a nice meal.
