1 box frozen chopped spinach, thawed, and drained
1 gallon chicken stock
1 small onion, finely diced
1 tbs. butter
1 bag frozen cheese tortellini
salt and pepper
grated cheese

Directions:
Directions:
Squeeze out thawed spinach. Cook onion in butter until translucent. Add chicken stock, spinach and bring to boil.
Toss in tortellini and cook until al dente. Serve with freshly grated cheese.
