8 skewers
red onion
peppers
squash
eggplant
cherry tomatoes
mushrooms
Dressing:
1/3 cup olive oil
4 tbsp soy sauce
1 tbsp garlic powder

Directions:
Directions:
Soak wooden skewers in water to prevent wood from burning. Peel and cut onion into squares. Cut peppers, squash, and eggplant into chunks (do not peel). Thread all vegetables onto skewers. Combine dressing ingredients and brush over vegetables. Bake at 350ºF for 20 minutes. Then raise heat to 450ºF and bake an additional 10-15 minutes.
