5 lbs Idaho potatoes
2-3 eggs
1 1/2 cups flour
1 tbsp salt
1/2 tsp thyme

Directions:
Directions:
Boil potatoes in skins. Allow to cool, and peel. Rice potatoes into large open faced bowl, cover with dish towel and refrigerate for 1 day. This will allow potatoes to dry out.
Mix all ingredients into the riced potatoes. Flour hands and form into golf ball sized balls, drop into boiling water. When dumplings come back up to float, they are done.
Left overs, great sliced and fried in butter the next day.
