1 1/2 lb (680 grams) baked salmon
2 tbsp chopped fresh dill
4 tbsp light mayonnaise
1 egg, beaten
1 tbsp ketchup
1 carrot, grated
3 tbsp bread crumbs
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 chopped green onion
1 tbsp cornstarch or flour
1/4 cup cornflake crumbs
oil for frying

Directions:
Directions:
Chop up cooked salmon and add remaining ingredients, except for the cornflake crumbs and oil. Form patties from the mixture and roll in the crumbs. Refrigerate for 1/2 hour to set.
Heat oil in a frying pan. Fry croquettes in oil until browned on all sides.

Great recipe for leftovers. According to Mishpacha, using salmon gives a fresher flavor than when using canned salmon, but try it our for yourself if you don't have fresh salmon around!
