1 1/2 cups of graham cracker crumbs
3 tbsp sugar
1/2 cup butter, melted

4 pkgs of 8 oz cream cheese, room temp
1 cup sugar
1 tsp vanilla
4 eggs, room temp
1 tsp of freshly grated lemon peel

Preheat oven to 325
prepare 9 inch spring form pan with first 3 ingredients.

In mixing bowl, beat softened cream cheese, sugar, and vanilla. Add eggs, on at a time, and lemon zest. Pour into prepared crust. Bake for about 55 minutes. When completely cooled, cover and refrigerate for at least 8 hours.
