2 c. chopped pineapple
1/4 c. finely chopped red onion
1/4 c. red pepper finely chopped
1 finely chopped jalapeno
1 T. lemon juice
2 t. sugar
1/2 t. salt divided
1 t. chili powder
1/4 t. pepper
4 salmon fillets 6 oz

Combine 1st 6 ingredients and 1/4 t. salt

Heat lg nonstick skillet over med high heat. Coat pan with spray. Combine remaining 1/4 t. salt, chili powder, black pepper and sprinkle over fish. Let sit 10 min. Add fish skin side up and cook 4 min each side.
Serve with relish

Another way to do the salmon: 1 T. maple syrup, 1 T. Hoisin, 1 t. Dijon, 1/4 t. pepper, 1/2 t. seasoned salt. Cook as above.
Akso rub salmon with oil, then salt and rest. Slash skin, then sear in hot skillet skin side down 4 min, turn and 3 minutes more.
