1 1/2 pounds shrimp
1 large mango, cubed
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1 tablespoon ground ginger
2 tablespoons white vinegar
1 teaspoon black pepper
1 teaspoon salt
Wooden skewers (pre-soak in water so as to not burn when grilling)

Whisk oil, vinegar, garlic, ginger, salt and pepper together in a small bowl. Coat shrimp in the ginger mixture. Thread mango cubes and shrimp onto skewers (4-5 shrimp per skewer). Grill over medium heat until shrimp turn pink (only a few minutes).
