2 1/2 cups rhubarb ( or a little more to fill pie shell or Cake crust for everything.)
1 cup white sugar
2 tbsp butter
2 eggs
2 or 3 tbsp flour More or Less
2 tsp Harry Hornes custard powder
1/2 cup orange juice and rind of one orange
add a bit of tapioca if desired

Directions:

Mix sugar, flour beaten eggs & butter. Pour over Rhubarb. Bake in hot oven 450ºF for 10 min. then 350ºF for approximately 50 Min.
I usually mix Rhubarb with all the wet ingredients in a bowl and then fill Crust. Top with streusel.
