1 1/2 lbs catfish
1/2 cup yellow cornmeal
1 tsp paprika
1 tsp dried thyme
1 tsp salt
1/2 tsp celery seed
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 C skin milk
cooking spray
foil for lining baking sheet

Directions:

1. Preheat oven to 425º, line a baking sheet with aluminum foil and coat with cooking spray.
2. In the first shallow dish ( I use 2 pie plates) stir together cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper. In the 2nd shallow dish add the milk.
3. Dip the catfish in the milk, then place in the cornmeal mixture.
4. place on the baking sheet and spray the top of the fish with cooking spray until wet.
5. Bake for 15 to 20 minutes until fish flakes easy with a fork.

I some times add several dashes of hot sauce to the milk and then let the fish soak in it for 20 minutes or so. You can use any mild white fish for this dish.
