15 large granny smith apples, peeled and sliced
lemon juice
1 C. flour
1 C. sugar
4 Tbsp. cinnamon
6 Tbsp. flour
2 recipes for double pie crust

Directions:
Place the apples in a large pan, sprinkle with lemon juice to keep apple slices from turning brown. Sprinkle the flour, sugar and cinnamon over the sliced apples and toss to coat. You can add more cinnamon and sugar to your taste. Depending on the amount of apples, you can also add more flour if needed. Line 2 ten inch pie plates with pie dough, pile the apples into the pie pans.(pile the apples high) dot with the butter and top with pie dough. Cut steam slits into the tops of the pies. Pre-heat oven to 400º, bake pies for 30 minutes at 400º, then turn oven down to 350º for 30 minutes. test with sharp knife inserted in the thickest part of pie. If the apples aren't soft enough, put back in oven and check every 20 minutes until done. Take out the pies and cool.

* If the apples you are using are to sweet, you can add more lemon juice to them, and cut down the amount of sugar.
* You will be able to tell if you have enough flour by how the mixture looks and tastes. Taste an apple slice, you should be able to taste flour, if they are sweet enough and have enough cinnamon.
